Grey Orchard is a new concept that’s coming to Austin thanks to Fig Italian Kitchen & Bar‘s James Sun and Chef Partner Cole Fitzgerald. According to a press release recently sent to What Now Austin, the new Modern American cuisine eatery is expected to open at 2700 North IH-35 in Round Rock this Winter.
“We’re proud to join a dynamic culinary community alongside neighbors we admire, including Whiskey Cake, Jack Allen’s, Salt Traders, Pinthouse Pizza, Cover 3, and Hopdoddy,” the press release reads.
Grey Orchard will transform the former IH-35 Denny’s into a restaurant defined by Modern American cooking, seasonality, and a moody interior designed for both intimacy and community.
At the helm of the new culinary venture is Sun, who launched Fig Italian Kitchen & Bar on S. Lamar Blvd in July 2024. The Italian meets Europe eatery with an ever-evolving menu has already received rave reviews, and that may also be because the man cooking up Sun’s vision. Leading the charge in the kitchen is Chef Cole Fitzgerald, a seasoned and celebrated professional who earned a Michelin Guide mention at the age of 24. Chef Fitzgerald will also run the kitchen at Grey Orchard.
While the menu is still unknown, with both Sun and Chef Fitzgerald lighting the path to success for this new, explosive food foray, you can expect the food to be just as clean and upscale as the aesthetic. Chef Fitzgerald is also known for pushing culinary boundaries, so you can also expect the food and dining experience to be uncanny.
“With a warm, moody ambiance throughout, Grey Orchard provides flexible spaces for every style of gathering,” the press release reads.
At Grey Orchard, you’ll have the option of indoor dining, bar top seating, and two private rooms for events and parties.

Official opening and grand opening dates have yet to be revealed, but Grey Orchard already has social media pages up and running to help you stay in the loop about the new modern American fine dining outlet.
