New Bagel Shop Coming to Williamson County

The Williamson County Bagel Co., a family-owned bagel shop, will open at Centro Plaza in summer 2024, according to a recent report in Community Impact.

“Everything is custom-made,” co-owner Alexandra Lawson tells What Now Austin. “We have our own bagel recipe, deeply rooted in our love for food. We are motivated to bring that to the community.”

Mrs. Lawson explains that they hope to serve “seasonal bagels”, such as pumpkin bagels in the fall, or color-coded holiday bagels aimed for kids.

“Living out here in the Georgetown/Liberty Hill area, we have observed astronomical expansion,” Lawson adds, explaining her and her husband & co-owner Scott’s motivations to start their shop. “But there wasn’t a place to get a good bagel.”

Having met twenty years ago while working at a Chili’s, the Los Angeles couple have long desired to start a restaurant.

“Our dream was always to open our own restaurant, whatever that was.”

In closing, Mrs. Lawson notes that the restaurant’s name is rooted in a love for Williamson County, where the couple and their kids now reside.

Once Williamson County Bagels opens in 2024, readers can choose to eat-in, take-away, or drive-thru from 5am to 2pm.
