Homegrown Austin breakfast, brunch, and lunch spot Phoebe’s Diner is preparing to expand to its fourth location. This time, it’s headed to Southwest Austin, where it will replace The Local at 9901 Brodie Lane.
“The goal is, we’re trying to get open in March, before spring break,” co-owner and executive chef Camden Stuerzenberger told What Now on Friday, who says the location will require relatively minimal renovations. “It’s got good bones. The kitchen is great. Basically, we’re just going to make it look like a Phoebe’s.”
The Phoebe’s menu features categories like Rise & Shine, a selection of breakfast choices like Biscuits & Gravy, Bananas Foster French Toast, and ricotta buttermilk pancakes. Then there are Sandwiches & Burgers like the Brisket Sandwich, the Crab Cake Club, the Diner Burger, and the Fried Green Tomato BLT. There are also Barbecue choices like the Brisket Benny and the Brisket Burrito.
Phoebe’s has been continuing to grow in popularity with its monthly specials. The January special (hurry up and try it!) is a Tomato Basil Soup with charred tomato and onion, topped with crema and fresh basil, served with a Grilled Cheese Sandwich on Rosemary Sourdough bread, with a blend of goat, mozzarella, and smoked cheddar cheeses. Two dollars from each are donated to the No Kid Hungry Organization. The February special will also see a portion of its proceeds going to charity, and will involve a take on the classic chili dog.
It’s been a long and satisfying journey since Phoebe’s Diner opened in September 2017, Stuerzenberger says.
“It’s a lot of work, but it’s been fun growing out our team them grow. We have one team member who began as a host, then was a food runner, then a server and a bartender, and is now an area manager. It’s a lot of learning, but it’s really cool.”
