A new veteran-owned destination for wine and lots more is preparing to launch in Bastrop in early 2026. It’s called Pluto’s Wine Bar, and it’s bringing date night vibes and all things oenophile to the space at 924 Main Street, near the intersection with Chestnut Street.
“Led by Chef John Wayne Formica, this veteran-owned, family-run establishment will be a welcoming neighborhood destination offering a chef-driven menu, a curated selection of domestic and international wines, and an atmosphere designed for both everyday gatherings and special occasions,” say press materials shared with What Now by Chef John Wayne Formica.
What Now spoke with Formica on Monday about plans for the opening.
“The concept is a wine bar, a restaurant, and a bottle shop,” Formica said. “It will be a restaurant with a full menu, starting around five o’clock, with flatbreads, cheese and charcuterie boards, and a dry-aged fish program for crudos.”
It’s true. As Pluto’s Wine Bar revealed in a recent Facebook post, “We’re curing everything right here on site—fresh pristine fish plus time in our dining room ager.”
“The forthcoming wine bar will feature a producer-oriented wine and beer list, thoughtful zero-proof options, a curated wine club, and a retail section where guests can purchase bottles to take home,” continues the description in the press materials. “In addition to regular service, Pluto’s plans to host educational tastings, themed events, and private functions, expanding Bastrop’s growing food and beverage landscape.”
“You’ really got to see it,” the chef said. “It’s a date night spot, with a nice, sexy, laid-back vibes. There’s lots of copper, raw wood, black tones, and great lighting. It has that glow.”
