Pollo Rico Building in Hutto

According to recent public records, a growing Mexican fast-casual chain is soon building up in Hutto.

Pollo Rico, run by Rehman Momin, will be building up at 901 Ed Schmidt Blvd. Costing an estimated $950,000, the “New construction for one-story building with build out for restaurant (2,980 SF) and remainder area for future tenant” is expected to reach completion by June 2026.

“Come try our Authentic Mexican Charcoal Grilled Chicken & Carne Asada,” the official tagline states.

Unfamiliar readers can expect a menu centered on charcoal grilled chicken, flautas, tacos, and other classic Mexican dishes.

No opening date has been announced.
