According to recent public records, a growing Mexican fast-casual chain is soon building up in Round Rock.

Pollo Rico, run by Rehman Momin, will be building up at 2651 Gattis School Road. Costing an estimated $150,000, the “Remodeling of 1347 s.f. Restaurant Building” is expected to reach completion in January 2025.

Locals may recognize the address as the former home of Dazzle Coffee & Smoothies, a former drive-thru cafe occupying a standalone building, an ideal acquisition for the growing Pollo Rico brand.

“Come try our Authentic Mexican Charcoal Grilled Chicken & Carne Asada,” the official tagline states.

Unfamiliar readers can expect a menu centered on charcoal grilled chicken, flautas, tacos, and other classic Mexican dishes.

No opening date has been announced.
