With locations on Burnet Road and in Republic Square, Rosen’s Bagel Co. is a homegrown Austin mainstay for “Authentic Bagels, Boiled-and-Baked Fresh Daily.” And as its following grows, the local bagel brand is preparing to open a third location, this time in Windsor Park.

The Rosen’s Bagels website tells us that much; the only question has been, Where in Windsor Park?

It appears we have an answer! This week, What Now came across permit paperwork submitted to the Texas Department of Licensing and Regulation that shows a new Rosen’s Bagels opening at 5900 Westminster Drive. That would place the new Rosen’s near Southern style cafe Hank’s Austin.

The Rosen’s menu boasts bagel varieties ranging from Plain to Everything, with everything in between: Poppy, Rosemary, Blueberry, Cinnamon Raisin, Jalapeño Cheddar and more. And they’re paired with Schmears like Scallion, Veggie, Basil Lemon, Poblano, and Strawberry—or with spreads like Butter, Jam, Nutella, and Peanut Butter.

“Rosen’s Bagel Co. makes all their bagels in house, with a 48-hour process that ensures your morning starts right,” says a description on the bagel shop’s website. “This care extends to our artisanal schmears and locally roasted coffee. This is the kind of bagel your New York cousin actually respects.”

What Now reached out to owner Tom Rosen this week to ask about the planned location. Rosen wasn’t available to talk about the opening by deadline, but we’re hoping for an update soon.
