Georgetown establishment The Garden Bites & Beer is undergoing major changes to its menu and identity. Formerly a “Boston Italian” concept, the restaurant is now transitioning to a New American gastropub style with strong Texas culinary foundations.
“I came on as a restaurant consultant to this restaurant to redesign and reflip the menu,” now Managing Partner Gabe Dupuis tells What Now Austin. “I brought on executive chef Eric Soriano and together we have revisited some of our favorite Texas Hill Country foods, putting our own spin on it.”
Apart from lunch and dinner, Dupuis is eager to emphasize the restaurant’s Saturday and Sunday brunches as a buzzing new event, especially considering their outdoor seating, shaded by oak trees.
Dupuis names their elote corn fritters with a honey sriracha dip and the green hatch chile smashburger as “a perfect embodiment” of their culinary vision. While much of these new dishes may seem “off-the-wall”, as Dupuis himself puts it, he guarantees that locals have been far more receptive to the restaurant’s new direction.
“We brought soul and — as the young kids say — a vibe to this restaurant. We’re taking off now.”
