A new chapter is beginning for acclaimed chef George Mendes.
According to Boston Magazine, the Danbury, Connecticut native has quietly parted ways with Amar, the Portuguese fine-dining restaurant situated on the 17th floor of Raffles in Boston’s Back Bay.
Mendes was instrumental in launching the sky-high spot in 2023, and now the restaurant is set to slowly evolve into a new concept under different leadership. For the time being, Amar continues to serve dishes like Arroz con Langosta and Jamón Ibérico.
Best known for Aldea—the Michelin-starred Portuguese restaurant he ran in Manhattan for over a decade—Mendes is now turning his attention to a new Boston-based concept. In collaboration with his wife and brand manager, Suzanne, he’s developing a tasting menu-driven restaurant paired with a bakery, market, and café.
While the vision is still taking shape, Mendes mentioned that the restaurant will feature an open kitchen and chef’s counter. He’s currently exploring locations and hopes to secure a sub-2,000-square-foot space in or near the South End, where he and his family have lived since moving from New York to open Amar.
As a first-generation Portuguese-American, Mendes plans to continue drawing from his heritage. Diners can expect rustic Portuguese flavors in a space that’s both relaxed and refined. Mendes told What Now Boston that he isn’t ready to share more details publicly yet, so specifics remain uncertain for now.
One thing is certain, though: While Mendes may be moving on from Amar, he’s not stepping away from the stove.
