In the fall, What Now Boston reported that five of nine tenants had been confirmed for Cambridge’s upcoming Eastern Edge Food Hall. Now, a sixth spot appears to have been filled.
According to the food hall’s website, Lone Star Taco Bar will join Clover, Juicy Jay’s, Everybody Gotta Eat, Việt Citron, and Perillas Korean Kitchen at 290 Main St in Kendall Square.
“Lone Star is the collaboration of the shared and individual experiences of owners Aaron Sanders and Max Toste, who spent much of their early years in Texas and Southern California, respectively,” the eatery’s website explains. “The flavors found on our menu are both familiar and robust, inspired by the open air markets and taquerías of Austin, Dallas, Los Angeles, Oaxaca and Mexico City.”
Lone Star was founded in Allston in 2012 before expanding to Cambridge in 2015. The eateries are known for their modern Tex-Mex street food, including tacos, tortas, tostadas, and small plates, paired with mezcals and a wide selection of tequilas. Sanders and Toste are also behind Waltham’s Deep Ellum gastropub and casual Mexican eatery Lenora in Portland, Maine.
Situated on the “eastern edge” of the MIT campus, Eastern Edge is slated to open sometime in early 2026. What Now Boston has reached out to Sanders and Toste for additional details about the Kendall Square Lone Star location and will provide updates as they become available.
