A Burlington, Vermont-based breakfast chain is expanding into the Greater Boston area.
Boston Restaurant Talk reports that The Skinny Pancake will soon open in the Northshore Mall at 210 Andover St in Peabody, taking over the former hop + grind space. A business search for the restaurant confirms this exciting news.
The Skinny Pancake is known for its healthier take on classic breakfast foods, serving breakfast all day alongside lunch and dinner. The menu boasts “a bit of everything,” with options ranging from breakfast burritos, eggs, and crepes to smash burgers, poutine, and shakes. The eatery also offers a wide variety of vegan and gluten-free options.
According to the restaurant’s website, the first Skinny Pancake was served on the evening of June 4, 2003. Founders Jonny and Benjy Adler started with “no experience, a cart made of wood scraps from their parents’ kitchen flooring, and a junked sailboat trailer that had been crudely outfitted into a flatbed.”
Today, The Skinny Pancake operates eight locations across Vermont, New York, and Massachusetts, with plans to explore further opportunities in the Northeast. The first Massachusetts outlet recently opened in Hadley.
The new Northshore Mall location of The Skinny Pancake is tentatively scheduled to open before the end of November 2024, as noted in a recent Facebook update.
