Kentucky-based brunch chain Biscuit Belly is continuing with its Charlotte expansion after opening its first Charlotte-area spot at 1949 E. Seventh St. in Elizabeth this week. It has already secured its second location at 2147 W. Highway 160 in Fort Mill.

Todd Gallinek and Deepen Patel are the franchise operators behind the expansion, which is expected to consist of six locations throughout the Greater Charlotte area in alignment with a deal announced last year. Gallinek and Patel are associated with Power Brands Hospitality Group, which is behind two existing Biscuit Belly locations in Huntsville and Hoover, Ala.

The new location in Fort Mill is expected to open in mid-October.

Founders Chad and Lauren Coulter first opened Biscuit Belly in 2018. Since then, it has expanded to 14 locations across six states: Kentucky, Georgia, Alabama, Virginia, South Carolina and North Carolina. Including the new spot in Charlotte, there are two locations in North Carolina, with the other in Raleigh at the Seaboard Station.

The brand is known for its biscuit-centered menu, featuring biscuit sandwiches, biscuits and gravy and shareable plates like bonuts, or biscuit doughnut holes. They also serve classic breakfast items like eggs and pancakes as well as lunch sandwiches. Biscuit Belly emphasizes that its biscuits are scratch-made and perfected by acclaimed chef Tavis Rockwell.
