A couple Noble Food & Pursuits concepts are heading to the revitalized Sadler Square shopping center in Davidson. In addition to Rooster’s Wood-Fired Kitchen, Jim Noble’s bakery concept Copain will be joining the shopping center, taking a 4,100-square-foot space that is slated to open in June 2026, according to the Charlotte Business Journal.
This will be the fourth location for Copain, which currently has spots in SouthPark and Winston-Salem. There is also another Copain location slated to open at The Bowl at Ballantyne in late 2025.
Like the forthcoming location at The Bowl at Ballantyne, this spot in Sadler Square will offer an expansion on the bakery concept. In addition to artisan breads, pastries and grab-and-go provisions, there will be a full-service French-style brasserie, as well.
Copain Bakery’s usual menu features baked goods as well as breakfast items like quiche and parfaits; salads and sandwiches; handcrafted coffee and tea beverages; and wine.
Copain is part of Noble Food & Pursuits, which includes other local concepts like Rooster’s Wood-Fired Kitchen, Noble Smoke, Bossy Beulah’s Chicken Shack, The Jimmy and Field Pea Catering. The group’s philanthropic pursuits include 10 Million Meals To Go and the Charlotte Mecklenburg Dream Center.
Piedmont Capital has been renovating the shopping center through months-long exterior and interior renovations. An update in May suggested that tenant announcements and openings would begin in the second half of 2025 and continue through the start of 2026.
