On May 11, La Dolcekca Bakery Cafe closed its doors along Montford Drive. However, owner Karina Cooper teased more plans in the works at the time.
“There have been ups and downs, but the journey has been nothing short of amazing. I cherish every moment, every smile and every delicious pastry shared with you,” she wrote in a farewell announcement at the time. “While this chapter may be closing, I am filled with hope and excitement for what the future holds. There are no limits to where we can go from here, and I can’t wait to share the next steps of this journey with you!”
Now, Cooper is preparing to open La Dolcekca Deluxe Bakery at 1994 Charlotte Hwy in Mooresville. In an announcement earlier this summer when she shared she had received the keys to the new space, she described it as a smaller space — which was what she was looking for — but one that was “bigger in flavor.”
“I’m more than excited to start this new journey with you guys!” Cooper wrote at the time.
In a recent update, it appeared that construction and preparations in the space were ongoing.
Menu highlights for the new bakery will include tres leches cake, flan and Dubai chocolate, according to reporting by the Charlotte Observer. The spot will likely open later this summer.
