Local Bakery Owner To Bring Ramen Shop To Salem Bottleworks

John Bobby, owner of popular Bobby Boy Bakeshop in Winston-Salem, will be opening a new ramen concept as part of his multi-concept unit built around his new Bobby Boy Bakeshop location at Salem Bottleworks. The ramen shop, whose name is yet to be announced, will join the second Bobby Boy Bakeshop location at 845 South Poplar St.

Bobby told What Now Charlotte that he is targeting an August opening for the ramen spot. The noodles will be made fresh in-house, similar to how products are made for Bobby Boy Bakeshop.

“The mill that we have that’s going to mill the flour for our bread production will also mill flour for our noodle production at the ramen shop,” Bobby said.

The goal of the multi-concept unit is to minimize waste. In line with that mission, they will be using bones from their butcher shop to produce the broth for the ramen.

Bobby said he was inspired to bring a ramen shop to the area based on his own culinary journey and a trip to Japan last year, when he learned more about ramen.

“It’s a lot of our favorite foods and things that we’ve been studying for quite a few years now and learning more and more about,” Bobby said. “It’s a way to continue doing all the things we enjoy about food.”

Prior to opening the ramen shop, Bobby will be opening a pizzeria — Grandpa Joe’s — in early summer as part of the multi-concept unit.
