A new breakfast and brunch spot is slated to open early next year in Winston-Salem.

Eggies Breakfast is heading to the space that formerly housed Baked Just SO at 5395 Robinhood Village Drive.

Gustavo Mar, who also operates Los Toritos — a Mexican restaurant in Winston-Salem — will be opening the spot. He told What Now Charlotte that customers can expect breakfast items like omelets, pancakes, waffles, French toast, breakfast sandwiches and croissant French toast. The menu will also feature lunch items such as burgers, subs, soups and salads.

In addition, Eggies Breakfast will offer bottled beer, flavored mimosas and some coffee-and-alcohol mixed drinks.

Mar said that he expects to fit about 12-15 tables in the dining area, and there will be a takeout window for to-go orders.

“It used to be a bakery, so it’s a fairly small dining area,” Mar told What Now Charlotte. “It’s also got a pickup window, and the idea is that for anything to-go, we’ll try to flow that traffic through the pickup window and leave the inside for the dining experience.”

When the location opens, hours are slated to be Monday through Sunday from 6:30 a.m. to 3 p.m. Mar said that he is targeting a January opening date, though it could end up being later depending on how buildout goes.
