Winston-Salem has a new fine-dining restaurant in the pipeline, slated to join the Salem Bottleworks development. It is part of a series of concepts that John Bobby — known for Bobby Boy Bakeshop in Winston-Salem — is bringing in rapid succession to Winston-Salem this year. All of the concepts will join the recently-opened location of Bobby Boy Bakeshop at Salem Bottleworks at 845 South Poplar St.
The casual fine-dining restaurant, whose name has not been announced yet, will feature a simple, small-plate menu designed around what products are available at the multi-concept unit built around the bakeshop. Bobby and his team plan to produce everything in-house for all their concepts and diminish waste by using products across multiple concepts.
Bobby told What Now Charlotte that they will be using the pastry program and bread production facility for Bobby Boy Bakeshop to produce the desserts and bread for the fine-dining restaurant. The main dishes will be structured around what is available at their butcher shop from day to day, and what local produce is available. As a result, customers can expect a changing menu. There will also be a wine list.
The fine-dining restaurant will be the final piece in a larger puzzle that Bobby is putting together at Salem Bottleworks. The unit will also feature a pizzeria slated to open in July and a ramen shop expected to open in August.
The fine-dining restaurant is expected to open late this year or in early 2026.
“It’s exciting to see it all come together,” Bobby said. “It’s been rattling around in my brain for six years, so I’m excited to see it all in full swing, and it’s just starting. So it’s an exciting time.”
