Paloma Replacing Sabor Latin Grill in Mooresville

A pair of local restaurateurs are preparing to open Paloma, a new restaurant in Mooresville located at 279 Williamson Road, Site G.

Co-owners Valentino Panizzut and Heriberto Chavez are in the permitting stage of opening the new restaurant in the former home of Sabor Latin Grill, according to the Charlotte Observer. The two have opened several North Carolina restaurants, including Havana 33 Cuban restaurant, Burrito Loco in Mooresville, and Juan Loco in Cornelius and Verde in Huntersville. Now, the duo is working to open a brand new concept early next year.

“It will be totally different,” Panizzut tells the Charlotte Observer. “We also used to own a restaurant called the Prickly Pear that closed during the pandemic. There might be a few things on the menu that pay homage there. [At Paloma,] We’re calling it small bites and craft cocktails with a Latin flair,” he said. “We could be doing sushi — probably sushi — seafood, fried calamari.”

The new restaurant will sit in the Mooresville Town Square, sharing a building with Jimmy Johns, Bad Daddy’s Burger Bar, and Whit’s Frozen Custard. Chef Hector Abraham Mendez will oversee the menu, using his Dominican Republican roots and experience in New York City to create it. Customers can expect specialty cocktails from mixologist Ramon Acevedo, including classics such as mules, old-fashioneds, and martinis, and some more fun options, including tiki cocktails.
