The Accidental Baker, a popular pop-up bakery that has been open at the Metropolitan shopping center since March, will be moving to Oakhurst at 4416 Monroe Rd., Suite D to fuel the bakery’s expansion plans. The micro-bakery space is beside Sweet Spot Studio.

The move, first reported by Axios Charlotte, will allow owner Matt Cabana to get his own kitchen at the site. Cabana told Axios Charlotte that the move will allow him to increase his output, which will help him expand the brand moving forward. At the pop-up shop, he often sold out of products. The new kitchen will help him keep up with demand.

The new location comes with a catch: unlike the pop-up shop, people will not be able to walk in and purchase items on the spot. Instead, customers will need to order online two or three days ahead of time for now. They will then be able to pick up their orders on site.

Cabana first launched The Accidental Baker brand earlier this year after seeing his baked goods — which he started baking just for his friends and family — explode in popularity. The bakery produces completely gluten-free products. Offerings include sourdough bread, hamburger buns, bagels, croissants, biscuits, focaccia bread, cookies and banana bread. Cabana also uses only organic ingredients such as grass-fed butter and farm-raised eggs.

Eventually, Cabana hopes to open up the bakery for walk-ins again. Until then, he will likely hold pop-ups where walk-ins are allowed, though there is no set schedule for when pop-ups would take place. The first one — to celebrate the move — will be held at the bakery on Sept. 21.
