Don and Diane Pfeil, who opened The Counter in Mooresville at 1098 Brawley School Road in 2023, announced in a recent Facebook post that the restaurant is changing hands as they move into “a new season of life” and enter retirement.
“Almost two years ago, we opened The Counter, pouring our hearts into creating a place where good food and great company could come together,” the couple said in the post. “What started as a little deli quickly became so much more — it became part of our family, our community and our daily lives. Every sandwich made, every coffee poured and every conversation shared has meant the world to us.”
However, The Counter will continue on. Couple Ron Anderson and Beth Ruby are taking over the spot, and the Pfeils shared that there will be “some exciting updates ahead.”
Ruby told What Now Charlotte they want to keep The Counter largely the same beloved neighborhood spot that it is now. They plan to keep the menu, ingredients and dedication to quality that customers expect when they visit The Counter. However, customers might see new additions to the menu, as well as more indoor seating.
“Having our own place is something we’ve talked about for a long time. We’d been up to The Counter several times to eat and were really impressed with their menu and the service was amazing,” Ruby said. “We felt like this was the type of place we would like to have — great neighborhood, good energy. When the opportunity came about, we decided to stop talking about it and start doing it.”
The spot is known for serving breakfast items, coffee and a variety of sandwiches, from chicken caprese to piled-high pastrami. For Ruby, the ability to keep the spot going is important.
“Keeping small businesses going and supporting small businesses is key to the community and key to the local economy. What are we without small businesses? We want to be part of keeping that going,” Ruby said.
Moving forward, Ruby and Anderson are looking forward to connecting more with the community through The Counter.
“We love all our patrons and we look forward to meeting them all in person, meeting new customers and new friends, and carrying on the tradition of The Counter and expanding a little on that,” Ruby said.
