One of Columbus’ favorite taco trucks is making the leap to a permanent home. AJ’s Birria, known for its rich, slow-stewed birria tacos and cheesy quesabirrias, is opening a brick-and-mortar restaurant at 3307 Sullivant Avenue.
Since hitting the streets, AJ’s has built a loyal following with its signature tacos served alongside savory consommé for dipping. The truck’s reputation for bold flavors and hearty portions has made it a must-try for taco fans across the city.
The new restaurant space will give AJ’s the opportunity to expand its menu, offer indoor dining, and serve customers year-round—something not always possible with a food truck. The Sullivant Avenue location places the restaurant in a bustling West Side corridor surrounded by a mix of locally owned businesses and diverse dining options.
An exact opening date has not yet been announced, but signs of progress at the building suggest it won’t be long before AJ’s regulars—and new fans—can enjoy their tacos in a sit-down setting.
With this move, AJ’s joins a growing list of Columbus food trucks making the transition to brick-and-mortar, bringing their street food roots into full-time restaurants while keeping the flavors that made them popular in the first place.
