As first reported in Dayton Daily News, Dayton brewery Carillon Brewing Co., which has been closed since early January, is making plans to reopen soon. The establishment, located at 1000 Carillon Blvd, is planning a soft opening for Feb. 12, with a grand opening currently slated for March 17.
According to information found in the article, the brewery first opened its doors in 2014 and the food menu hasn’t changed much over the last decade. As detailed on the brewery’s website, that menu consisted of items like burgers, fish and chips, German pretzels and German-style sausages. When the brewery reopens, its new food offerings will center around smoked meats.
The brewery is bringing in Eric Evans of Dayton Barbecue Company for its new food program. Per information on the eatery’s website, Evans’ Southern-style barbecue features items that pair well with beer, like pulled pork, brisket and smoked wings.
Another exciting change that guests will notice when the brewery reopens is expanded seating. Brady Kress, President and CEO of Dayton History, which is the organization that owns and operates the brewery, shared with What Now Columbus that the establishment is adding 70 new seats inside. And an equal amount for the beer garden area is on the way, and will be rolled out in the warmer months, bringing the total capacity to approximately 400 inside and outside.
Carillon Brewing Co. is unique in that, according to its website, it is the nation’s only production brewery that is located in a museum. The brewery is part of Carillon Historical Park, which is a 65-acre open-air history museum that serves as the main campus for Dayton History, a private non-profit organization that celebrates and preserves the area’s history. According to information found on the organization’s website, Carillon Historical Park is home to over 30 historic structures and cares for over three million artifacts.
