Vandelay Hospitality Group is bringing a new Mexican bistro, El Molino, to the heart of Dallas. Named El Molino, the bistro offers gourmet fajitas, rare tequilas, and an intimate candlelit atmosphere. Diners can experience El Molino at its Snider Plaza location starting Tuesday, October 14.

El Molino opens its doors to diners on Tuesday, October 14. Brought by Hunter Pond’s Vandelay Hospitality Group, located at 6818 Snider Plaza, El Molino features wood-fired fajitas, enchiladas, and a curated tequila program.

“El Molino is a place that I wanted to exist in Dallas that pairs fun Mexican food with similar sexy vibes like Drake’s and Jack & Harrys,” said Hunter Pond, CEO of Vandelay Hospitality Group. “Our menu leads with creativity, with an underlying tone of fan favorites presented in a slightly upscale format. Fun touches—like Fried Chicken Tenderito fajitas—live alongside timeless dishes like Crab & Shrimp enchiladas, while our cocktail program pays tribute to how I like to have my margaritas – strong and filled to the brim.”

El Molino’s menu highlights classic Mexican dishes with playful American twists. The Dallas-based bistro’s spotlight is on a wood-fired fajita program offering protein items. Highlights include Filet Mignon, Fried Chicken Tenderitos, Grilled Adobo Chicken, Pineapple Ribeye, Guajillo Marinated Shrimp, and an Oyster Mushroom Medley. All dishes are paired with classic sauces and accompaniments.

The bistro menu also serves enchiladas and items like Smoked Chicken Verde with tomatillo salsa. The Las Vegas Ribeye marinated with guajillo pineapple nectar and the Brisket Taco Plate are served as well. El Molino also brings the Branzino Diamanté, offered Veracruz-style or with lemon garlic.

Open for dinner and drinks, El Molino’s bar menu features its signature Flaming Frozen Margarita. Pond describes it as El Molino’s ‘absolute signature drink.’ The Spicy Margarita with Fortaleza Reposado is another major highlight of the Mexican bistro.

A Chupito program featuring specialty house shots, such as the Palo Santo with smoked reposado and the classic Carajillo is also available. A whimsical collection of rare sipping tequilas enhances El Molino’s cocktail range.

El Molino’s 2,500-square-foot space blends Mexico City’s vibrant energy with refined French-inspired design. A total of 83 seats and a small 9-seat bar deliver an intimate setting at the Snider Plaza location.

Pond’s design combines dark wood, ivory tablecloths, rich carpeting, and candlelight to create an intimate, sophisticated setting. He states, “I love and respect Javier’s, and Mr. Gutierrez is a close friend, so this is my ode to if Javier’s and Drake’s had an offspring.”

El Molino is part of Vandelay Hospitality’s portfolio, which ranges from classic American eateries to upscale dining concepts. With its blend of tradition and creativity, El Molino is poised to become a must-visit dining destination in Dallas.
