Princeton Proposed Home of Chipotle Mexican Grill

Princeton is one of the fastest growing cities in Collin County with a consistent growth rate of about 15% over the past several years. That’s according to the Princeton Economic Development Corporation, which states the growth is expected to continue.

With the population growth, more restaurants and retail are popping up across Princeton. One restaurant planning a spot at 800 W Princeton Dr. is Chipotle Mexican Grill, according to a recent project filing. The filing states the finish-out on the 2,325-square-foot space could wrap up sometime this fall, but there is no word on when the new Chipotle will begin serving customers.

The Chipotle chain offers a menu of fresh ingredients with no artificial colors, flavors, or preservatives. Diners can select from a variety of choices to add to burritos, salads, and tacos. Proteins include grilled chicken, steak, and carnitas. Plus additions of rice, beans, lettuce, roasted chili-corn salsa, and cheese are available. Burrito Bowls, Lifestyle Bowls, and quesadillas, plus sides of guacamole, queso blanco, and salsa with chips are also options.

Chipotle has nearly 300 locations across the Lone Star State with more than 3,000 in operation in the U.S., Canada, the UK, France, and Germany.
