Big Apple Bodega, Denver’s innovative chopped cheese food truck is embarking on an exciting new chapter. The curbside concept is transforming into a brick-and-mortar business, according to a recent Westword article.
While the exact address of where Big Apple Bodega will be is under wraps for now, the location is somewhere on South Broadway. Owner Brian Murphy tells What Now Denver the lease is signed and he gets the keys May 1, and hopes to open a month later. Licensing and scheduling inspections are ongoing.
Murphy was inspired by his time in the NYC culinary scene to make a chopped cheese sandwich concept, with different variations served on Kaiser rolls. The venue will also have Dole Whip on Fridays and brunch on the weekends.
“We are super excited for our next venture here in Denver! Turning our food truck business into a brick-and-mortar was a dream from the very beginning! We are going to make your visit to our restaurant an experience you will love! Our “Park” (patio) will be a great place to eat and chill with friends and family! We look forward to seeing everyone soon!” Murphy said.
