A trio of restauranteurs is bringing a new breakfast and brunch concept to Denver. The target opening date for Fox and The Hen at 3212 N. Wyandot St. in Denver is sometime mid-summer of this year.
Owner Michael Fox has worked in the restaurant industry since his teenage years and has always wanted to open a breakfast restaurant. Fox was looking for a great location, but then COVID hit. A recommendation from a friend led to Fox opening Dis Burrito, which now offers breakfast burritos in 22 local coffee shops.
“I wake up every morning giggling because I started this breakfast burrito business, and now we’re doing extremely well. And, it literally was the catalyst that put me into my dream, which is opening a breakfast restaurant.”
Now, the self-described “serial entrepreneur” is teaming up with Juan Padro of Culinary Creative and Bar Dough owner Carrie Baird to open his passion project, Fox and The Hen, in the former location of Cebiche Highlands.
“I think the partnership is definitely something that’s truly important. I think Juan has done a phenomenal job of being one of the leaders in Denver, transforming the restaurant group especially through COVID,” Fox told What Now Denver.
“The way he gives back to the community and the way he just tries to help people,” Fox said, “for me, it will be cool to be a part of that arm of Culinary Creative.”
Baird, who is a Top Chef alum, will run the kitchen at Fox and The Hen. “There’s such a great attitude about her,” Fox said. “She’s just an amazing, creative, fun chef, and we both see eye to eye,” Fox shared.
Fox said the new restaurant will offer amazing staple breakfast and brunch foods with the best level of service. They are currently working to finalize interior and exterior designs. “We’re all super excited. It’s going to be a fun project to partner together.”
