New Sandwich Shop Coming Soon to Colorado

Colorado Springs residents and visitors can enjoy Vietnamese and Euro-style sandwiches in January of 2022.

Lee’s Sandwiches will open its first Colorado restaurant in early January. The restaurant will be located in Colorado Springs and offer a variety of Vietnamese Bánh Mì sandwiches, freshly-baked pastries, and iced coffees.

Foodies can start off with some hot wings, egg rolls, or spring rolls and move on to a variety of sandwich options. Lee’s Asian sandwiches are served on baguettes with a variety of choices available such as cured pork, grilled chicken, and vegetarian with fried tofu, vermicelli, bean curd, and yam.

Most of Lee’s Euro-style sandwich offerings are on a croissant, and options include ham and cheese, club, and tuna almond. Breakfast and iced coffee drinks are options, as well as a variety of Vietnamese desserts.

Lee’s Sandwiches is a family-owned business with franchise opportunities. Chieu Le, founder of Lee’s Sandwiches, and his parents Ba Le and Hanh Nguyen, opened their first restaurant in California in 1983. Since then, dozens have opened across the country.

Mai Robinson is managing partner at the Lee’s Colorado Springs location. “It takes a community to do anything,” Robinson told What Now Denver about working with others throughout the process to bring the restaurant to Colorado Springs. “The good in people transcends through everything. I am so amazed.”

Lee’s Sandwiches will be located at 5660 Barnes Rd., Colorado Springs, CO 80917. According to the Lee’s Sandwiches website, a Denver location will also open soon at 2905 W. Alameda Ave.
