A New York–style sandwich shop will be opening in the Capitol Hill neighborhood, taking over the longtime home of Melita’s Greek Cafe & Market. The space at 1035 Lincoln St. will house a new concept coined Jordan’s Deli next, according to the Denver Post.

The eatery is led by Jordan Spence, a first-time restaurant owner but a hospitality industry vet with more than a decade in the business. Spence moved to Denver from Florida a few years ago and most recently worked at STK in LoDo. Now he’s switching from high-end dining to made-to-order counter food.

Jordan’s Deli will be an all-day operation, starting in the A.M. with breakfast sandwiches of eggs, cheese, and a protein choice (sausage, bacon, or ham). Lunch and dinner will focus on classic subs — referred to as “heroes”— made with Boar’s Head deli meats. The deli will also have a bar serving beer and wine, and it will have ice cream.

The 2,100-square-foot space previously housed Melita’s Greek Cafe & Market. That business had a successful run from 2008 until its closure last January, Westword reports. Spence signed a five-year lease for the property in early September and estimates build-out costs will be around $75,000.

Local nightlife mogul Regas Christou owns the property, records show. As of the most recent city filings, the project remains under review, with inspections and liquor licensing still pending. Planned hours are 6 a.m. to 8 p.m., with the possibility of extending service until 3 a.m. on Fridays and Saturdays.
