Ursula Brewery Shuts Down, milieu fermentation Takes Over 

It’s a new concept from a local brewmaster.

After Ursula Brewery closed in December, it was announced recently that a concept called milieu fermentation will be taking its place. The business is working on the 2101 N Ursula St. property to get it ready, Denver Post reports

The company’s location is on the University of Colorado Anschutz Medical Campus in Aurora. Owners Rob Bessett and Andrew Bergeron hope to be open in the spring, they told What Now Denver. 

“milieu fermentation aims to connect with our community through thought-provoking beverages, and to curate an inviting and captivating taproom experience,” Besset explained. He said that milieu, in essence, means “the place, time, and circumstances in which our socialization occurs.”

Ursula Brewery closed its doors after nine years of serving the community. Scott Procop, the owner of the business, sold the space so he could prioritize his other concept Cedar Creek Pub.
