Windsor will be home to a liquid-nitrogen ice cream shop next summer. Franchise owners Nicole Fuchs and her husband Ross Fuchs hope to open the Milkster Nitrogen Creamery at the Future Legends Sports Complex by July 4th of 2022.

The couple wanted to open an franchise and discovered leases were still available at the Future Legends Sports Complex, which is set to open in the spring of 2022. They thought ice cream would be a good idea.

This is the first restaurant for the Fuchs, and Nicole thinks the trending liquid nitrogen ice cream option will be a hit in Windsor. “I think just in general, just the people in our town alone, are going to be excited about this because there are not many ice cream options around here,” she said.

It’s an interactive experience and somewhat of a show. “You get to watch the liquid nitrogen being poured in there,” Nicole explained. “You can make it however you want.”

Milkster visitors looking for a sweet treat will grab a cup, add mix-in fillings, and choose an ice cream base with offerings of 12 flavors including seasonal tastes, as well as staples such as vanilla, chocolate, and strawberry. Flavors will rotate and will be based off what guests enjoy.

Milkster ice cream makers then use stand mixers and liquid nitrogen to quickly freeze the ingredients into a smooth ice cream. Once it’s back in the cup, guests can select a choice of toppings—chocolate, nuts, caramel, and more—then it’s weighed.

They’ll also offer ice cream balls called dragon breath, so when children put the frozen treats in their mouths, it looks like they’re breathing out dragon breath smoke.

Milkster will also serve coffee and mini pies. Pie-lovers will get a tin with the crust, and they can add filling and toppings before the mini pie goes onto a conveyer belt to heat.

The Future Legends Sports Complex will feature a four-acre dome to house volleyball and basketball tournaments. Multi-purpose fields offer room for baseball, softball, soccer, and more. A professional stadium, dorm rooms for players, and area hotels and other restaurants are expected to bring locals and tourists to the area.

Milkster will be located in the retail sector outside the stadium at 801 Diamond Valley Dr., Windsor, CO 80550. James Arnold of Cushman & Wakefield represented the landowner of the development in the Milkster transaction.
