Those living in Saugatuck must be familiar with GROW Cafe + Bistro. After a successful run of eight years, the restaurant was recently put up for sale by owners Lindsay and Alec Payleitner. A few months later, the couple appeared in front of Saugatuck’s Planning Commission on Thursday, Jan. 18, with plans for a new eatery called Payleitner at 650 Water St. The new restaurant is anticipated to open in the spring.
The space was previously occupied by River Market Deli, which closed in 2021 after the building was sold. The space has remained vacant since then. The proposed restaurant will have an indoor dining area with up to 49 seats and an outdoor dining area with a capacity of up to 30. The Payleitners also plan to transfer their existing liquor license to the new restaurant to offer beer, wine, and cocktails for on-site consumption and social district takeaway.
Payleitners plans to create a chef-driven fast casual concept and will inherit the gratuity-free model practiced by GLOW. The new restaurant will also use all compostable eat-ware and drink-ware for enhanced sustainability. This story was first reported by Austin Metz on Holland Sentinel.
