‘Onesto’ Mediterranean Cuisine and Bar Space on the Way to Ypsilanti

A large culinary project is taking place in downtown.

Something new is on the horizon for downtown Ypsilanti.

Onesto is a new concept from The Current Restaurant Group coming to 17 N Washington Street. This will be a high-end restaurant serving Mediterranean cuisine with a bar addition. According to a recent social media post, the opening date is likely spring 2027.

“Western Mediterranean | Culinary imagined,” says the post.

Stewart Beal from Beal Real Estate has been teasing the project since late last year on social media. He is working on the design process, and in a post described the restaurant as featuring a market and 100-seat speakeasy. The space will be around 12,000 square feet from renderings.

The project has only been recently revealed as Onesto, and it comes from owner and chef Grant Slauterbeck. He has previous restaurant experience in the area. For the menu, Slauterbeck will be infusing Mediterranean flavors from Sicily, Southern France, Spain and North Africa.

“It’s not your typical Mediterranean food as most people look at it,” Slauterbeck said.

Onesto is on the west side of N Washington Street, next to Water Tower Distilling Company. This is also beside Davinci Meeting Rooms planning and conference space, and also across from Beara Bakes. What Now Detroit recently reported on another upcoming project around the corner called Bowerbird Social, a cafe and potential wine bar at 210 W Michigan Avenue opening later this year.

The Onesto team has not set up a website or social media for the restaurant. More information on the project will be revealed in the coming months.
