A coffee roaster and café concept out of New York is heading to Houston. Depending on construction at Midway’s East River development along Buffalo Bayou, El Condor could open during the summer of 2023.

El Condor, a full-circle coffee experience from hospitality company Wilcuma, offers an all-day café menu featuring seasonal options. “It has to be very fresh. It has to be very seasonal. It has to be very local,” said Nicolas Simon, CEO of Wilcuma. El Condor will work with local farmers and suppliers for ingredients, beer, wine, and more.

El Condor will change menus with the seasons to offer a variety of dishes. “We may also keep the same menu item but adapt it based on the seasons,” Simon explained. “It’s very unique to the specific location, and it’s also very much depending on the season.”

El Condor in New York has been open about four months. Wilcuma works with clients in Houston, so Simon was able to often travel to Texas. “That gave us a chance to know the city pretty well and also to meet with local people including the Midway folks.”

Simon said they liked the dining scene and the energy of the city during their visits, so they decided Houston should be part of the plan for Wilcuma’s El Condor concept. “We just went for it.”
