Permission Whiskey to Expand Current Space in Houston

Permission Whiskey & Service Co. could be expanding its space in The Heights at 2920 White Oak Dr. According to a recent project filing, Permission will expand into an adjacent 1,500-square-foot space. Renovations will be necessary and could be complete by late spring or early summer of 2023.

Owner Peter Nolan first opened Permission in 2020. According to the Permission website, Nolan spent his college years working in whiskey bars and pubs in Lexington, Kentucky. Nolan was consumed by the bourbon culture and when he moved to be closer to family in Houston, he spent nearly a decade operating bars and restaurants in the Greater Houston area before opening Permission to celebrate all things whiskey.

The cocktail list includes a range of Old Fashioned flavors, classics such as the Moscow Mule and a daquiri, as well as beer, wine, and champagne. The Penicillin cocktail features Monkey Shoulder Blended Scotch, fresh lemon, honey-ginger syrup, and peated scotch. Or, you could try the Espresso Martini with Reyka Vodka, espresso, Mr. Black, Bailey’s and Godiva.

Guests can enjoy a variety of cuisine from fresh oysters, shrimp cocktail, and smoked duck, to yellowfin tartare and charcuterie options. Permission is a bar “to indulge and revel in the now,” according to the brand’s website.
