Uberrito Fresh Mex is rebuilding its location at 1609 Durham Dr, Houston, TX 77007 after a fire severely damaged the building, requiring a complete reconstruction except for the foundation. Lindsay Hunt, President of MRI Heritage Brands, confirmed that the upcoming rebuild will keep the restaurant’s footprint the same while introducing several upgrades to enhance the dining experience.
“Unfortunately, a fire destroyed the kitchen,” Hunt stated. “The building was recently demolished in preparation for rebuilding.” Despite the setback, the corporate-owned location is using this as an opportunity to refresh its look and functionality.
The new design will incorporate more natural light, a fresh color palette, and additional booth seating for a more inviting dining area. The exterior will also feature a redesigned patio to enhance the customer experience. Additionally, the restaurant will introduce a designated pick-up area for online and app orders, ensuring a more efficient service for guests ordering ahead.
According to the permit on file, the rebuild is estimated to cost $811,000 and will maintain the same 2,223-square-foot layout as before. Construction is already in progress, with Uberrito Fresh Mex anticipating a late 2025 or early 2026 reopening.
