Alder & Oak and Zorba’s rooftop bar will bring upscale experiences to Downtown Jacksonville when they open at the Hub Brooklyn (400 Riverside Avenue) some time in December 2025.

Alder & Oak will focus on, “rustic, Aegean inspired wood-fired dishes,”  with the chef, “elevating humble ingredients, and bringing seasonality to every dish”, according to the restaurant’s Instagram.

Owner Mark Janasik shared further details on the restaurant on Facebook, saying, “at the heart of Alder & Oak stands a Mibrasa coal-fired grill — a centerpiece that transforms the simplest ingredients into soulful, flavorful dishes”.

According to Janasik, guests will be greeted with warm bread and first-press olive oil from family farms in Greece and Turkey, and will dine on hand-thrown ceramic dishes in coastal blue hues.

Dishes will include wood-roasted whole fish brushed with lemon and olive oil, rustic vegetables, and more. Many items will arrive still sizzling from the hearth in what Janasik calls a “fire moment”.

Atop Alder & Oak, guests will find Zorba’s Bar, a lounge that offers classic European cocktails along with a curated wine program featuring coastal varietals from Greece, Italy, Spain, and Southern France.

Both restaurants are part of  The Hub, a mixed-use project located in the center of Jacksonville’s Brooklyn neighborhood that will also include Janasik’s Southern Grounds Coffee, outdoor spaces, and a collaborative design studio by Cronk Duch Architecture and CD+urban.
