Chop Shop Artisan Butcher Planning to Expand Throughout St. Johns County

After opening its second location earlier this year, the owners of Chop Shop Artisan Butcher are getting ready to open new locations throughout St. Johns County.

The company recently opened its second location in SilverLeaf this summer and is already planning to open additional shops in Nocatee and Durbin over the next three years, according to the Jacksonville Business Journal. The artisan butcher shop is run by Brian Whittington, a James Beard Award nominee who gained popularity with Preserved Restaurant before it closed in July, as well as managing partners Ben Zimmerman and Anthony Quintieri, who are both trained chefs.

When the new locations open in the next couple of years, customers can expect custom cuts of beef, lamb, pork, chicken and duck, house-made sausages, and fresh and prepared seafood. Chop Shop Artisan Butcher recently opened its second location in St. Augustine at 50 Silver Forest Drive, Site 103. The 2,000-square-foot butcher shop features three meat counters and refrigerated grab-and-go items. The company has enlisted sommelier Christof Bauer at this location to offer a beer and wine selection to accompany meals.

“Our community craves and expects real food experiences, not just in a restaurant but in their homes,” Whittington tells the Business Journal. “The home cook should have access to the freshest and highest quality products, so Chop Shop is about providing the best ingredients we can find.”
