“We are the early birds, the morning people, the go-getters, the coffee drinkers, and the breakfast trendsetters, providing different yolks for different folks,” declares Eggbred, the growing early-morning breakfast chain, on its website. Founded in 2020 by CEO Albert Shim, the brand has grown to encompass fourteen locations on both coasts of the continental United States.
With one location already in Land O’ Lakes, FL, Eggbred recently launched its first restaurant in Florida’s east coast, at 112 Bartram Oaks Walk, Building F, Unit 103.
“The opening was great, way beyond expectations, with a very big line,” franchisee Xhimi Bujari told What Now on Monday. “The thing is, we’re open every day from 6 a.m: until 1 p.m Monday through Friday, and until 4 p.m. Saturday and Sunday. Opening at 6 in the morning—nobody does that. And now word is getting out.”
The menu features Breakfast Sandwiches like the Bacon Egg & Cheese, the Scramble Me Softly (Soft scrambled fresh-cracked eggs, chives, caramelized onions, sharp cheddar, smoked paprika spread, toasted milk bun), the Country Fried Chicken, and the Ben Franklin (Black forest ham, fresh-cracked over medium egg, truffle-dressed arugula, handcrafted English muffin, served with a side of classic hollandaise); and that’s a long with more lunch-friendly sandwiches like Eggbred Cheeseburger—which, yes, features an over-medium egg, along with caramelized onions and sharp cheddar.
What has tended to be the most popular thing on the menu? What Now asked Bujari.
“I can’t really say one. People have been coming and then coming again and trying something else. It seems like people want to try to everything.”
With one successful opening in the Jacksonville area under his best, Bujari says, there are plans for more.
“Our future is to open the next location.”
The site of the next location has yet to be confirmed, but recent coverage by Jacksonville.com says plans are to open in the St. Augustine area next.
