Fat Man’s BBQ Bringing Southern-Style Cooking to Hastings

A new food truck is preparing to get on the road in Hastings, making its home near NAPA Auto Parts, and roaming between local events, too. It’s called Fat Man’s BBQ, and it promises what owner Nicholas Roper describes as classic “Alabama, North Carolina-style barbecue.”

“I’ve been in the restaurant industry for over fifteen years,” Roper told What Now on Friday. “In the last few years, I’ve decided to build my own food truck, from the ground up, in order to provide people with better quality food at a more affordable price.”

The Fat Man’s BBQ menu features ribs, chicken, brisket, pulled pork, and sides like potato salad, macaroni and cheese, baked beans, and cornbread muffins— “All the good Southern classics,” Roper says.

Fat Man’s BBQ also has “the cheapest lunch special in Hastings.” It’s a $9 plate featuring smoked chicken, two sides, a cornbread muffin, and a drink—and from 10 a.m. to 2 p.m., the price will drop to $7.

Roper says Fat Man’s BBQ is in the licensing stages and will be open by the end of the month.
