Oyster, Caviar, Champagne And More Coming to San Marco

According to recent reporting in Jacksonville.com, local husband and wife duo Chris and Julie Cohen are upgrading their popular pop-up raw bar, Brine Oysters, Champagne & Caviar, into a unique brick-and-mortar restaurant in historic San Marco at 1435 Naldo Ave.

“We’re doing a 12-course tasting menu inside, reservations only,” Mr. Cohen tells What Now Jax.  “There will be a la carte seating in the covered courtyard, all-seasons seating.”

“We’re also going to do a casual happy hour in the back portion of the building which will be a self-serve set-up.”

When explaining the culinary concept of the Oyster caviar experience, Mr. Cohen states it is primarily an oyster and caviar experience, but more broadly a “100% seafood restaurant.” Other servings will include crudo and dry-aged fish products. 

In way of beverages, the establishment will serve champagne, wine, and local beer by Aardworld, which Mr. Cohen enthusiastically states is perfectly compatible with Brine.

So can we expect more Brine locations in the future?

“This is our sole focus for now,” Cohen says. “It’s our first concept. We would like to have more Brines in the world, but no more pop-ups. We have more concepts down the line.”

The prospective opening date is February 1st.
