The Jacksonville-based modern Puerto Rican cuisine company, Pique, is gearing up to debut their food truck this summer, co-owners and spouses Christian and Sara Guzmán confirm.
The husband-and-wife duo started sharing their modern twist on Puerto Rican food at pop-ups and catering events in 2020. After jumping through hoops to obtain permits they are finally debuting the food truck concept this summer. It will continue to make pop-up appearances at markets, as well as provide catering for events such as weddings. Given the arduous process to obtain their food truck licenses, the duo are very excited to finally bring their cuisine to the entire Jacksonville community.
“We want to reach all communities of Jacksonville,” she says. “We do have a wide-range of opportunities for people to try our food in the very near future. It’s really just a restaurant on wheels.”
Their unique fare uses the flavor profiles, as well as ingredients including meats, herbs and seasonings, from the island’s traditional cuisine but elevates it with popular modern ingredients like microgreens and oils. The team also makes a concerted effort to make the food’s presentation aesthetically pleasing.
“We are putting more thought into how it looks,” she says. “We [are] taking something that is a traditional idea but presenting it in a more modern way.”
