Sweet Melissa’s Homemade Ice Cream, a local sweet shop in Palm Coast, is getting ready to launch a food truck in the area.

The company, led by Melissa Herndon and her husband Wilson, recently submitted a plan review application to the Florida Department of Business & Professional Regulation to open a new food truck. A representative from that company tells What Now Jacksonville that the new food truck is expected to open within the next two months, but couldn’t provide an exact opening date. When it opens later this summer, customers can expect a variety of sweets and treats, including ice cream, pie, coffee, and more.

For Melissa, Sweet Melissa’s began not as a business but as a shared adventure, according to the company’s website. After she retired, the quest for a fulfilling post-retirement life led to a discovery—a passion for making homemade ice cream. What started as a curious interest soon blossomed into a craft as Melissa and her husband honed their skills and fell in love with the art of ice cream making. Enrolling in a class to learn the intricacies of crafting the perfect homemade ice cream, they realized the joy it brought them and the potential to spread it further. And thus, the idea of Sweet Melissa’s was churned into reality. Sweet Melissa’s Homemade Ice Cream is not to be confused with Sweet Melissa’s Ice Cream Shoppe in Bonita Springs. The company only has one brick-and-mortar.
