Final Dinner Service at EDO
The management of EDO Tapas & Wine has decided to close the Las Vegas restaurant. The restaurant offers modern Spanish tapas and international inspirations in an intimate yet casual off-Strip experience.
EDO will shut down in September to reopen as a new concept, imagined by renowned chef Oscar Amador. The award-winning chef said, “EDO has been the story of my career so far, from Spain and El Bulli to Las Vegas and Le Cirque.”
EDO Hospitality Group partner and chef Oscar looks forward to serving guests for one final meal before closing out service on the final day of business at the location before beginning the next chapter.
EDO’s beginnings date back to 2017 as a food truck that gradually won over the local foodies. A year later, Chef Oscar and his partner Roberto Liendo opened their brick-and-mortar spot in Chinatown.
The restaurant received multiple awards over the years, including Restaurant of the Year (Desert Companion) and 10 Most Exciting New Restaurants (Vegas Magazine), to name a few.
Reflecting on the success of the Spring Mountain location, Roberto Liendo said he’s happy they could introduce a new way of dining to the area.
Standout Dishes on the Menu
The restaurant has plans to celebrate its patrons’ favorite dishes before it closes for a new concept. Diners can expect their beloved classics to make a comeback to the tasting as well as the main menu. Among the old favorites is also the signature Cuttlefish Carbonara. A full Iberico de Bellota program will be in place alongside an inspired Gin and Tonic cart.
Chef Oscar to infuse global flavors into dishes influenced by Spanish traditions. Guests can expect the Montadito: a Smoked Salmon Crostini with Truffled Cream Cheese and Honey; Kurobuta Pork Cheeks with Panang Red Curry, Sunchokes, and Thai Basil Gremolata; and the ultimate Green Tartare: Zucchini, Avocado, and Pistachio Vinaigrette.
The 35-seat gem will honor its guests with bold Catalonian flavors before the commencement of refresh and revamp.

They will be breaking out with some more dramatic changes in the next few months, says chef Oscar. Guests can expect to have a tasting experience celebrating the renowned chef’s lifelong commitment to creative, sophisticated cooking and to the special events that celebrate it.
