Founded by mother-daughter team Rosalie Guillem and Audrey Guillem-Saba, Le Macaron French Pastries was created as part of a “dream to share delectable French macarons with the world and to reunite their family though their love of French pastries.” And that dream is coming true: Le Macaron now encompasses dozens of locations nationwide, including one in Las Vegas, at 3377 S Las Vegas Blvd, Ste 2353.
Now, a second Le Macaron location is preparing to launch in Las Vegas before the end of the winter, this time at Town Square Las Vegas, according to licensing paperwork submitted to Clark County.
“I used to live in Vegas, and I moved back out here to open this business,” franchisee Joe Eckart told What Now on Wednesday. Eckart, who worked as mortician for 25 years and was looking for independence, says Le Macaron offered both that independence and the kind of work he’d thought about doing all his life. “Cooking has always been a big passion of mine, and I always wanted to be part of something like this.”
Le Macaron’s signature French macarons come in a wide variety of flavors, from Madagascar Black Vanilla to Columbian Coffee, to Sicilian Pistachio, to Tiramisu. There are also many other French pastries offered at Le Macaron’s bakeries, and Eckart the selection on this location’s menu is still being put together.
“It’s the sort of thing you’re always looking for,” Eckart said. “When you just want somewhere to go have dessert.”
