15 years ago, Debbie Roxarzade decided to name a restaurant after her daughter. Now,  Rachel’s Kitchen is a Las Vegas mainstay, offering fresh, casual fare at seven locations throughout the valley. The eighth is set to arrive in Town Square at 6605 S Las Vegas Blvd. this spring.

“We have quite a big customer base in that area, and the next closest location to them would be in Henderson,” Roxarzade told What Now Las Vegas.

“On another note, Town Square is definitely growing, and that whole South end of the Strip is growing. We’re definitely looking forward to opening up in that area.”

Once open, the menu will stay consistent with the other locations. As for the setting, Roxarzade hinted at some stylistic upgrades. They are building out the restaurant in a space that was most recently used for retail, so the project had to start from scratch.

“The other locations are a little bit older, so the Town Square restaurant will have a bit more technology and a slightly different color scheme, but similar classic feeling to a Rachel’s Kitchen,” Roxarzade said.

According to building permits, the build-out is estimated to cost $400,000. While they have encountered some roadblocks due to the pandemic, the construction of Rachel’s Kitchen at Town Square appears to be in its home stretch.

“We’re hoping that when things return to some sort of normalcy that the growth will develop there, and tourism will go up again,” Roxarzade said.
