  • Toxic substances were not properly identified.
  • Non-food contact surfaces were observed to be unclean.
  • The equipment and utensils were not properly maintained and of adequate capacity for their intended use.

  • Wiping cloths were not properly used and stored. They are to be maintained in the correct sanitizing solutions when in use.
