Top Chef star Amar Santana will open a second iteration of his Spanish restaurant Vaca early next year inside the new Beaudry residential building at 960 W. 7th Street.
While the menu at the incoming outpost will stay mostly the same as its Costa Mesa location, the new Vaca will be met by an eager influx of competition as handfuls of new LA restaurants are now offering Spanish fare. As always, only time will tell how that may affect the concept’s approach.
Conversely, Vaca’s decades-old maiden operation hails from South Coast Plaza where Santana’s culinary concoctions reigned supreme upon debut and remain mostly unique to the area.
The 600-foot-tall building that will house Vaca’s DTLA reprise is situated in the ever-bustling breast of the region’s economic and cultural capital, meaning Vaca is sure to attract the masses, both by foot and flight.
