After a year-long delay due to the concurrent pandemic, the highly anticipated collaboration from award-winning restaurateurs Suzanne Goin and Caroline Styne is projected to open this July.
The restaurateur squad will be opening Caldo Verde on the ground floor of the Proper Hotel in Downtown’s South Park neighborhood.
Named after a traditional Portuguese soup, Caldo Verde will offer an eclectic menu that draws inspiration from Spanish, Moorish, Corsican, and Portuguese cuisine with hints of Californian flavors. According to Urbanologie, signature dishes will include “octopus braised in squid ink with olive purée, carrots braised in blood orange and pomegranate and clams with sherry, chickpeas, and onion blossoms” as well as a selection of boutique wines.
The restaurant will include a bar and lounge with a wood interior balanced with abundant greenery. Proper Hotel indicates that the focal point will be “a monolithic Judson Studios stained glass installation… nodding to Los Angeles and its historic European culinary influence.”
