Chris Phelps opened Breakfast by Salt’s Cure in 2007 highlighting griddle cakes he has been making since he was a kid.

He wanted it to be a fast-paced, counter-style service where people could come in and build their own breakfast from a select few items.

Found at 7494 Santa Monica Boulevard in West Hollywood, Phelps has his sights set on another location in town.

The new space, at 714 Montana Ave, in Santa Monica, will be just under 900 square feet. It will be taking over space previously occupied by Osteria Bigoli. Other nearby businesses include Spumoni Pizza, Frozen Fruit and Marmalade Cafe.

Phelps told What Now Los Angeles the work needed to the space will be minimal with new paint and a little refresher.

“Eventually we plan to open the front window and replace it with folding doors so the inside spills out onto the front sidewalk,” he said.

Phelps hopes to open next Wednesday and “before the end of March” at the latest.

Breakfast by Salt’s Cure is a quick service daytime restaurant that “revolves around our famous oatmeal griddle cakes,” he said.

“Fresh ground breakfast sausage and local farm eggs and citrus juices round out a nice little breakfast for the neighborhood,” Phelps added.

According to legend, Phelps made his first griddle cakes at the ripe young age of four, sneaking into the kitchen and starting a fire in the process but he’s been cooking them from that day on.
