Mustard’s Bagels, a sourdough bagel pop-up from brothers Kyle and Brent Glanville, has signed a lease for its first permanent location at 10850 Washington Boulevard in Culver City.
The company announced that it will begin remodeling the space that was the former home of Bloom, which has also served as the site of its weekend pop-ups, according to Eater Los Angeles. While no official opening date has been announced, the shop will continue to operate on Saturdays and Sundays from 9 a.m. to 2 p.m. during the build-out process. Known for its 72-hour fermented sourdough bagels, Mustard’s has built a following for its unique bagel sandwiches and limited pre-order options.
Mustard’s Bagels developed its concept around slow-fermented dough made with heirloom flour from the Tehachapi Grain Project. The bagels are hand-formed, boiled in malt syrup, and baked to a blistered finish. Since its launch, the pop-up has garnered attention for its weekend-only model, local sourcing, and creative menu. The Culver City location marks the company’s transition from a pop-up to a brick-and-mortar establishment, while retaining its weekend schedule during construction. Guests can continue to pre-order items online for weekend pickup or walk up to order from a rotating in-person menu.
Menu highlights include classic and specialty bagels such as salted plain, roasted sesame, and two versions of “everything” (standard and nori-based), along with house-made schmears like plain, miso scallion, chimichurri, and nova salmon. Signature open-faced sandwiches include the “Deanna Michelle” with Persian cucumber and garlic chili oil, and the “Grampa Sam” with nova salmon, pickled onion, and dill. A small selection of seasonal coffee, desserts, and vegan options is also available.
